No. Switching to a digital service will not change your ability to do
any of those things.

the terrestrial channels but have to switch to 'cable' to record from
any of the cable channels. This means that should I want to record
from cable I could only record from the one channel. This is why I'm
concerned that all the terrestrial and all the cable channels will be
lumped into one and that I will not be able to choose to record this
from BBC1 that from BBC2 and something from ITV1 etc
No, that won't be a problem. You will still be able to record from the
standard terrestrial signal. Upgrading from analogue *cable* to digital
*cable* won't affect this.
