My understanding of video is that to date scart has been the best way to
deliver video signals although the plug leaves a lot to be desired.
My slight confusion is over the advantages and disadvantages between
component, scart and hdmi. I appreciate scart and hdmi deliver sound as
well but other than that is there a major difference?

Have a look on Wiki!
Composite - whole TV video signal on one wire (limited horizontal colour
resolution in PAL).
S-video - TV signal on two wires (luminance and chrominance) sometimes
called Y/C
Component - three colours on three wires.
Scart 21 way. Can carry composite (both ways), S-video or component
(one way) plus sound.
Good for normal TV signals.
DVI - digital video signal - no sound
HDMI - digital video signal with sound (backward compatible with DVI).
