Garmin now has a vast number of different stats that it can display, but you
can only display a limited number on each screen. It's very configurable
though, so you can display different stats on the map screen, compass
screen, altimeter screen and so on, choosing whichever stats are the most
appropriate for the screen and for your personal preferences/requirements.
You can't display them all, but most aren't that important. Descent rate
may be very useful in an aeroplane for example, but I have no use for it as
a walker.

They don't start a new track, but they do start a new track "section" if you
switch it off and back on. Simply stopping for a while won't start a new
track. Track sections can easily be split into separate tracks later in
Ozi. Stats aren't reset until you reset them, they're not connected to
tracks.

In my Garmin, it always shows the distance to the next waypoint, which is a
tad annoying. I think if I look at the route page it will show the distance
to the end of the route, but I'm not sure about that since I rarely use
routes. It would be wrong anyway, since routes don't take account of all
the zig-zagging between waypoints (I rarely use many waypoints in a route,
just enough for a rough guide).

AA rechargeables have very good capacity these days.
