Myth, that is. Not umami, which is real, though I've yet to see studies
showing that we taste it using a fifth kind of tastebud rather than
somewhat else. Chinese Restaurant Syndrome, OTOH, has been extensively
studied and repeatedly shown not to be caused by MSG. Stands to reason,
really; if MSG were that bad, half of China would be permanently in bed
with migraines. I believe one now suspects a combination of bad cooking,
lack of use to other Chinese ingredients, and sykollegy, BICBW.
