Hi - I have self learned the material for the RYA Day Skipper theory
course and now wish to sit the exam. Does anyone know where I can do

It doesn't really work like that. The certificates for Day Skipper (and
Comp Crew) courses are "course completion" certificates not, on the face
of it, proof that you have a particular level of competence[1]. Thus you
cannot demonstrate said competence in an exam and get the ticket. The
theory course may have a test at the end of it (I wouldn't know, I haven't
done it) but this won't officially be an exam for your certificate.
or sea survival courses, unless you pass the exams at the end of the course
you don't pass and therefore don't get the certificate. They are proof that
the holder has attained a level of competence.
