Because after all training is supposed to stress the muscles etc so they
will respond and repair to meet the stress level, making you fitter. If
you interfere with the stress response too much, you may feel better,
but will you get sufficient repair stimulus?

It also bears on the modern obsession with swallowing water at every
opportunity lest you become even slighly dehydrated. Now it is true that
dehydration does impact peak performance so in a race this makes sense.
But does it make sense to train like this? why is the body's response to
dehydration not trainable like your heart, muscles and enzymes? The
Bushmen of the Kalahari sometimes still hunt by running game to
exhaustion, in the desert, it can take hours. Then they have to drag the
carcase back to base. No ubiquitous water bottles in sight. So I reckon
that are benefits in allowing yourself to get a little dehydrated when
exercising, might even get you a yard ahead of the next guy between
drink stations ;-)

Whilst it is important to drink while racing and training long distances,
there is no doubt your body adapts in situations where less water is not
available. For example, when I am fasting during Ramadhan, I often go for
runs and obviously I cannot drink water before during or after (unless I
time it just before the fast is ending). I find I sweat less and dont feel
as thirsty as I do when well hydrated - my body is able to adapt and I feel
no ill effects.

I wouldnt do a 2 hour training run but I have done up to an hour without
any problems at all.
