It would be the characteristic of not wanting to be eaten. Human
beings can imagine being caught, slaughtered and eaten, and wouldn't
want it to happen to them. I think that the leap veggies make is to
think that animals can imagine the same, and therefore it's somehow
cruel to put animals through that experience. This despite the fact
that almost all animals in the wild (and certainly the ones we've
domesticated), and the prey of something else.

As an aside, I don't think this chap wanted to be eaten.
