As the Swiss insist on being awkward and have their own currency, I'm
trying to work out how much of it to take in advance. I'd like to minimise
the amount by using credit or debit cards. Are these widely accepted in
petrol stations, supermarkets, restaurants & bars?
Yes. And most automated petrol stations (and there's a _lot_ of them)
will take virtually any sort of card, as well as accepting both Euro
and CHF notes.

Not generally. It's very unusual to find any retail establishment that
won't take cards. [1]
So if you're just planning on passing through it's possibly not worth
getting any out in advance, and just finding a cash machine if you
change your mind. Restaurants often don't allow a tip to be left on
the card transactions, but thios doesn't matter, as a tip isn't really
expected anyway, and is always appreciated, even when it's just a
round-up of 5% or less.
[1] OTOH they're also perfectly happy to take cash for large
purchases. Buying a new car or motorbike here is, um, interesting, as
cash seems to be the only way to do so. But even quite small post
offices, for instance, don't blink an eye when you walk in and ask for
30,000 francs in cash. It's only 30 notes, after all.
