If you get an HDTV with 1080i resolution, but a 100Hz refresh rate, will you
actually notice a difference between it and 1080p ?
Torn between a couple of models of TV, and it seems to be the main
difference.
Depends on how the source material is encoded. In general, movies are
encoded from 24p with what is known as 3:2 pulldown. They will remain
smooth in both modes.
Live television is a different matter. It almost always interlaced and
the smoother picture will occur on 1080i.
Having said that, there's some pretty damn clever processing going on
these days and the difference is not going to be huge. There will have
to be a trade-off between resolution and smoothness here though, but
how much you'd notice depends on how picky you are. I guess you should
get hold of your own source material you are likely to watch and test
the two. Don't use the shop's own demos as they will be biased to show
the best from the system.

[1] Who is wondering why the *** we are still using interlaced video
30 years after I started working in the industry. Arrrghhh. 50fps
guys, get it together.
[2] Who hasn't owned a TV for years. See enough of the *** at work.
