I've never had a problem with them - our current one does have a
variety if setting, with some using minimal fan assistance (but the
fan is always going), and a couple of grill-only settings, so perhaps
this fits your criteria.
What sort of cooking is it not good for?
Any kind of cooking where you want/need a heat differential. For
instance, you might have tandoori chicken at the top of the oven -
quite hot, curry in the middle in a dish with a lid - medium hot - and
a dahl simmering away in another dish with a lid - only warm - at the
bottom. Or you would if you had 3 shelves; I've only got 2, but you
get the idea. A fan that won't turn off ruins the whole concept.
