The interesting difference though is he fessed up completely - yes I was
drunk, yes it was my fault - rather than the usual motorist response of
blaming everyone but themselves and lawyering up to try to get away with
it.

Leaving aside the somewhat question-begging 'usual' there, another
difference is that the cyclist didn't stand to lose much by admitting
that he was drunk.
In fact, such a plea would be taen into consideration to reduce any
sentence passed, whereas for a driver the licence would almost always
be forfeit, whatever other penalty was imposed.
