They don't.
There are far fewer overnight trains in France as the TGV network is making
the sleeper service redundant.

I've done Lille-Marseille by sleeper train fairly recently (3-4
years ago) and it's a nice way to get there. I shared a compartment
with some bikers (petrol-assisted sort) whose steeds were also
making the trip.

Googling leads me to http://www.seat61.com/Monaco.htm which
mentions a 21:25 from Lille-Flandres (4-500 metre walk from Lille
TGV) arriving in Nice at 10:55. Don't know about bikes, but I
imagine there is scope for bulky luggage somewhere on the train
(there's not a lot of room for it in the couchette compartments).
