Some form of moisture and very low temperature is usually the cause of ice.
Count yourself lucky that only one of the cars does it, that is quite an achievement for VW.

can anyone help with what's causing the windscreen inside to freeze-up overnight? I know it's cold out and I expect it to freeze outside. We have two MkIV Golf's and only one of them is affected!A water leak into the interior somewhere probably. Check for water in the footwells and spare wheel well.

Check the heater and engine-compartment-side bulkhead drain plugs. It's not uncommon for these to get blocked with leaves, mud, etc. and then water fills up the nooks & crannies and gets into the passenger compartment.
The cure is tedious: It usually means the footwell carpets & soundproofing materials are full of water. The only way really to sort this is to remove the carpets and dry them out. If the car can be garaged, you can try putting a mains dehumidifier inside overnight (with the carpets out) to get the remaining moisture out of the upholstery, head lining, etc.
You do need above-zero temperatures for this to work at all well though, as the relative humidity in the cabin air needs to be fairly high for the dehumidifier to be effective. A garage is sufficient, as the DH puts out quite a lot of heat itself. It'll take several overnights to cure it, but you'll be amazed as to how much moisture these things can pull out.
I do the dehumidifier trick in our Land Rover - it works well but they do use a lot of electrictiy.
