Or maybe there aren't any...I don't know about Canada, but a typical
European overnighter won't have dedicated staff for seating coaches,
just the guard. The Caledonian is the same.

In fact, I believe that when air travel was starting to replace long
distance rail travel in the US, one of the advantages the airlines had
was requiring fewer crew members than a train did for the equivalent
number of passengers!
In North America, even for day trains (and, at least in some cases,
commuter trains), the number of crew required increases with number of
carriages. This leads to the situation where often only the minimum
possible number of carriages is made available for use, so you end up
with several completely empty carriages and the passengers crowded
into the few that are open.
Of course this policy does make sense when you have trains where a
member of crew is required at each open door at station stops...
