Long may he keep trading. Unfortunately the superstores with their

water, high fat and connective tissue, product is priced so as to
drive the local traders out of business. Our nearest town had 6
butchers 20 yrs ago. There is one left. He only "minces" to order.
One has the opportunity to select the meat or meats and watch as it
is weighed, priced and then minced. Very nice too if one fancies a
little less costly cut but higher flavour. eg. Shin of beef

Yes, the local butcher is slowly being driven out. We used to have a few private butchers and also a meat market which held many stalls of different specialist meats from all over the worlds. The meat market has gone and there are only 3 decent local butchers left. The one I use has his own slaughter house and a well sourced supply of meat. He has a few shops and also a bakery so still gets quite a few customers.
