If I'm not sure of someone I'll usually ask them for phone numbers (not
mobile), address, and explain that I will wait until the money has
transferred before dispatching.
After all, you have an eBay rating this buyer doesn't.

Quick payment could just mean enthusiasm, and is good for feedback rating.
