It's a distributed computer project - like the various SETI@home, and cure for cancer projects.
It works based on "folding" proteins. Your computer runs a simulation of how a few of those proteins will fold, and sends the results back when it's finished. The overall simulation can therefore take a lot less time, if thousands of computers are being used for the task.
Typically, these things kick in as screen-savers or only take as much processor power as isn't being requested by other programs (setting themselves as super low-priority), so that you shouldn't be stopped from using your computer normally.
