I quite like Kenton and don't really want to see him
set up for another disaster, which it is likely to be, unless either the
character transplant fairy is about to get its biggest commission to
date or, just possibly he strikes lucky, as he did with the caff, and
hires someone who is willing to run it for him, while leaving him as the
nominal manager. Could this be what Helen's beau, Leon-the-barkeeper,
is destined for?

Well, there you go, all sorted. Jim provides the finance and acts as
some sort of business partner, Leon becomes the day-to-day manager,
while Kenton .. oh I dunno, there must be some sort of front-man role he
can have. And they'll try to persuade Kathy to quit her job and take on
the catering, but if she has any sense she'll keep well out of it.

Didn't Nelson's Bar have someone called Shane who made a wicked quiche?

Presumably Kathy is being lined up to be the latter-day Shane.
