I use two methods. I create a folder of shortcuts on my desktop.
I also make my own toolbars and put them on the taskbar. The toolbar

If I've only got one open I just minimize and click on the desktop
icon for the one I want. My computer's desktop is as crowded as the
one it's sitting on, but it's my mess and I know where I've put
everything. That (for me) is what icons are for, saves me trying to
read all the little tiny words.

If I've got several things open at the same time, I'll windows-D and
then click.

I play a lot of games and they are all in one folder which is a star
icon on the desktop.
