I don't actually know. In the really good restaurants, it's not just
a simple rule of small glass for white and large glass for red. It's
a particular glass for each type of wine. You'll be familiar with
champagne glasses. Well I've been to restaurants where every time you
order a different bottle of wine, you get an entirely new shape of
glass.
As a scientist I am tempted to say it has something to do with how
much a wine needs to breath. Generally I think reds need to breath
more so a larger glass provides a larger surface area.

That would make sense, but having a different shape of glass for each
bottle is just silly.

So, why does red wine need to breathe more than white, then?

Well, I'm guessing they have more complex ingredients and that the bouquet improves with oxidisation of some of them in the
shhort-term. Let's face it, white wine is just fruit juice with alcohol. Red wine is complex.

You sound like a guy who doesn't like white wine. First of all, whites should be served in smaller amounts. They are generally
served chilled, and tend to warm up once they're out of the bottle, which should be kept on ice or in a cool sleeve. Chilling
slows the release of molecules to the nasal sensors. Floral flavours and scents are detected after on the tongue and while it
warms in the mouth.

The red wine goblet usually curves in gently towards the rim, beaten only in this respect by the brandy balloon, to capture the
bouquet for your nose. Certain rich Belgian beers demand this too.

Gosh, I could do with a nice glass of cold white! The hotel is having its monthly (complimentary) customer appreciation
reception in 10 minutes!

Ah, you sound like a gal who appreciates her wine in a sensible way! Knowledgeable but not pernickity. I'm sure I serve wine all
wrong. I just open a bottle and pour it into the nearest glass, whatever shape, whatever temperature. It would probably taste
much better served correctly, but I seem to manage to enjoy it pretty well even done the wrong way!

There's a great Italian restaurant called Carmine's, near Times Square in the Theatre District of New York City. The food is
classic Italian American, with a large choice. It's big and always very busy and serves enormous family-size dishes which several
can tuck into at a time. They have plenty of large round tables for large family parties available. (Ours was a corporate
Christmas Bash) Being Italian, there is plenty of vino flowing but they serve it in little glass tumblers, much like you would be
served fruit juice in a hotel. It doesn't affect the quality of the wine but it certainly makes it a different experience. There
is also a lot of water available, served in similar glasses.
