Or..thickly sliced onions, shoulder chops, chunks of black pudding, quartered peeled potatoes in a roasting pan, sprinkled with plenty of salt and pepper, and enough water to cover, then covered with a lid or foil and baked in a moderate oven for at least three hours, occasionally turning the potatoes. Then lift the lid off and brown the taties for another hour. You can add carrots if you like. Fancy it up with a bit of parsley sprinkled over, and possibly a bit of celery.
