EE, and programs like it, scrub the empty space so that even the
best forensic software cannot get anything.

EE is not as good as it claims and even 'scrubbed' data can be recovered.
Your best bet it is to use a live CD or USB and bypass the HDD altogether.
that way everything is in RAM and nothing is left behind.
I carry a couple of versions of linux on USB sticks that allows me to chat
on MSN/Yahoo/IRC, browse the web, edit office apps etc. No real knowledge of
linux is required just the ability to download a file and install it to the
stick. You can stick DSL or puppyLinux on a miniCD and carry it in a wallet.

My large USB stick even allows me to edit video and audio, edit pictures,
run a load of games, DTP, programming in 5 different languages, watch video,
run bittorrent, design and simulate electronic circuits and even run widows
apps all without even touching the HDD.
