Why would a psychiatrist be able to
elicit the truth from a couple of very young children who were almost
certainly asleep at the time?

Who's suggesting s/he would? I don't know if a psychiatrist could do it
but, more importantly, neither do the McCanns. The question is "will
you let...?" Well, would they or would they (or one of them) refuse
because they have something to hide. The answer to the (hidden)
question could come from their reaction to it.
