it tells you, right at the beginning.

you use the shrines, dotted around the labdscape. go up to one and
press circle.

it also gives you the option to save after you defeat each
collossus...

Well it only told me how to jump and get on the horse. Unless it was audio
on a cutscene, I had my volume down so would have missed it.
