V-Rally (PS1) - I know a lot of people hated this but I thought it was brilliant. One of my first PS1 purchases and has some of the best graphics on the PS1 IMO. Fast, detailed and arcadey. I likey. V-Rally 2 was pretty good as well.

Vigilante 8 (PS1) - I'm sure I played this and enjoyed it but I might be remembering the sequel on the Dreamcast.

I think all the other decent Vs have already been mentioned.
