Pleeze recommend a Castlevania game for me.
They're all good. Except those horrid 3D ones.
For the 360, you've got SOTN on XBLA, which is fantastic.
For the GBA, there's Circle of the Moon (ace, hard, most like SOTN), Harmony
of Dissonance (ace, bizarre), and Aria of Sorrow (best of the three, IMO).
For the DS, there's Dawn of Sorrow (sequel to Aria) and Portrait of Ruin. I
prefer the latter, but most people don't.
All of these are "Metroidvania" games - explore castle, reach new areas with
powers you find, some RPG-like leveling, some backtracking. All the others are
"old school" left-right platformers (OK, some up-down and right-left), with
whips.
For the Wii, you've got Castlevania (the original for the NES) and Super
Castlevania IV (for the SNES). The latter was originally supposed to be a
reimagining of the first game, but was later "retconned" into being a separate
chapter in the CV universe. Or something. Both are great, but SCIV is
obviously better. Both are pretty difficult though, whereas the Metroidvania
titles are mostly quite easy.
