Come on, who stole your thinking cap? If you want proof of what was
in the letter, all you need is a witness.
In the presence of the witness, make a photocopy of the document and
give the copy to your witness to keep. Or make two, get the witness
to sign them both and keep one for yourself. Get the witness to see
you put the original in the envelope, and to accompany you to the post
office where you post it Recorded Delivery.
Now all you need to worry about is the witness dying or being nobbled.
go to all that trouble to get proof that a certain communication was
sent if they weren't trying to do something underhand. Similar to
getting a *lot* of (too many) people to give you an alibi.
