I am filling in my tax return. There are some dates to be filled in on
the Self Employment section. It doesn't state the format. i.e. should
I write 14/02/2005 or 14/02/05, or 14/Feb/05. And is it DD/MM/YY or
what.
Or, does it really matter!

Assuming this is an online form, there is only one format to be used:

with ISO 8601."
Which means that the Revenue is totally unlikely to have seen it.
