I hate to agree with such harsh advice... but it's very true.

If you're really bothered then "I was actually really happy there, but they
wanted me to go into project management and while I enjoy responsibility and
ownership, I made the decision years ago to stay hands on" works every
time - you obviously love your job and will leave before you take their
jobs.

You owe me money for that one.
