AIUI the image does not go with mail that is sent. IIUC mail looks in
the address book to see if you have an image stored against an entry,
and if an email address matches and entry it displays that image.
What you can do is store photos of friends/family against a persons
address book entry and then their image appears at the top of messages
from them.

Ah, that makes sense. Don't know why I didn't figure that out myself! Thanks also for the pointer to Mailsmith - I'll take a look. Though I have to say overall that I am quite happy with Apple Mail.
