How do you suppress the image display in Apple Mail?

My wife has decided that she no longer wants an image in her Apple Mail messages. We have tried removing the "Me" image from within Address Book but it doesn't seem to work: it will let us put another image there but when we try to remove the image using the "Clear custom image" menu it leaves a little pink square there. Also, removing the image seems to have removed her login image too. We don't want that - just want to stop including the thumbnail in mail messages. I thought this would be easy but can't get to the bottom of it.

Any idea of how to simply tell Mail not to display an image at all?
