Channels shouldn't be an issue unless you are encountering interference.
(Devices from different countries might have an issue with channels,
e.g. channels 12 and 13 can't be used in the US but can in many other
countries.)

OK - I have now realised, as somebody who has as little to do with
networks as possible (that's for the IT guys at work), that I have made
a rather basic error.

Yes, there is. That's Internet Sharing.


So, without a router, the Airport on the iMac is only going to support a
single wireless connection, isn't it :-)

That depends on what you call a 'single connection'. It will talk to one
_network_, but there can be multiple devices on that network.
