Is there any way I can change the 'Kind' description for all files of a

type; ideally so OSX will remember that, forever, all files of extension xxx
will have the same description?

I'd imagine, if you do a 'Get Info' on one of the files, go to open
with, change to the relevent application, and then click "Change All..."
and it should fix them all to the same.

Hmmm... but that just puts the name of the application in the Kind field. I
want to override the application name with my own description
