Network wifi with wired between, how?

I know this may be a bit of a strange configuration, but I want to connect my Mini to my Linux/Windows box via a network cable, but also have each connected to my main router via wifi.
I basically want to be able to run VNC/RDP over the cable, whilst each maintains its own network connection to the internet via wifi. At the moment, the only way of getting the wired connection to work is to use internet sharing on the Mac, but then the Linux/Windows PC ends up using that as the internet connection too, sending unwanted traffic and putting extra load on the Mac.
If I disable the network sharing on the Mac, but specify the ethernet properties manually, it won't connect. The Windows side which I'm testing with seems to either want to use the wifi for both or the ethernet for both.
Example:
Mac, wifi is 192.168.0.10, ethernet is 192.168.2.1
Windows, wifi is 192.168.0.13, ethernet is 192.168.2.2 (also gets assigned this via internet sharing).
Connecting to the windows vnc server via 192.168.2.2 is not possible if internet sharing is off. If it's on, the windows pc uses that connection as its internet connection too.
If I connect via 192.168.0.13 then it is slow as it's using the wifi, but then the windows pc will use the router for the internet.
How the heck can I get it to use the wired for just the vnc and the wifi for the net? Do I have to use a totally different type of IP address with a different subnet mask?
