What's the best and simplest to use application to extract .rar files,

Best, I couldn't say.

Simplest to use?

I use the Unarchiver (handling everything it knows about).

I don't see that it could get easier.

They all do drag and drop, or double click.

How much simpler do you want to have it?

Support of pretty much all archive types, meaning you don't need a
plethora of different expanders. TheUnarchiver does well on this
score.

TheUnarchiver queues multiple files rather than decompresses them
simultaneously too, which is a big advantage over the builtin. I
forget what the Stuffit tool does.
