I've found Apple do take the time to source silentish HDs in their machines. My iMac's Hd (a 320GB WD) is virtually silent to my mind.
I've bought at least 4 HDs in the past for PCs, each billed as 'silent', but far from it. The best are Samsung, but even they produce a high pitched drone IME. I would give the latest a go - they seem to have good reviews on the quietness front.
Noise can certainly be cured by placement; prevention's better though.
