Just in case you are in the mood for yet another suggestion - StoryMill (which is part of the current MacUpdate bundle) has a clutter-free writing mode that I quite like - it takes over the whole screen like WriteRoom but it does white text on a blue background, bringing back wonderful nostalgic images of the old days of WordPerfect. Yes, I really did like WordPerfect.

StoryMill, incidentally, is a really nice product if writing is your thing. It's aimed at fiction writers but I find it good for technical writing too.
