Mixing 10.4 with 8.6 is a little difficult.
10.4 doesn't support the AppleTalk protocol for file sharing, so you
won't be able to connect to any of the 8.6 computers with 10.4 as a
client and 8.6 as a server.
It is possible to go the other way around, with 8.6 as the client and
10.4 as the server, but you have to do it using TCP/IP. All the
computers must have valid IP addresses on the same subnet.
I have turned Appletalk on and now the G3s can see the iMac but can only
connect as 'Guest' . I can't find out how to set the Appletalk User
and Password of the iMac to my standard settings, so that it fits in
with the other machines
The 8.6 computers must connect to the 10.4 computer using a Mac OS X
user name and password. They will then have access to the home folder of
that user. If you connect to a Mac OS X computer as a user with admin
privileges you can select the entire hard drive and have reasonably full
access to the computer.
You could create another user on the iMac which has the same name and
password as your G3s, if you like. Do that using System Preferences >
Accounts.
I have tried to connect the iMac to the G3s (which have file sharing
enabled), but there doesn't seem to be the equivalent of the Chooser
which gives a list of available servers.
That won't work, because when acting as a server, 8.6 only supports
AppleTalk for file sharing, and Mac OS X 10.4 requires TCP/IP for file
sharing.
If you were running Mac OS 9 on the G3s then you would be able to
connect like this, because Mac OS 9 added File Sharing over TCP/IP as a
standard feature.
This feature can be added to Mac OS 8.6 using third party software
(ShareWay IP, US$39 per copy).

Assuming you solve this particular issue (either by buying Shareway IP
or by upgrading to Mac OS 9), then you should be able to see the G3s
from the iMac by clicking on the Network icon in the sidebar of a Finder
window.
You can also connect to the server using "Connect to Server" under
Finder's Go menu, by entering a URL of the form afp://ip-address
e.g. afp://192.168.0.2
You _might_ be able to use the AppleTalk name of the computer
e.g. afp://MyG3
but I suspect this won't work. In that case, the following might work:
afp:/at/MyG3
but I think this will only let you connect via AppleTalk, not
auto-switch back to IP, and as 10.4 doesn't support AppleTalk for file
sharing, it might reject this URL form outright.
