Use ethernet cables, one from each computer to your router. The router
will
give each computer an IP address. To avoid confusion, disable the
wireless
while you do this.
Mmm i'd prefer not to disturb the wireless network and mess with the
router if possible (problems setting it up in the past)

It's transparent to the router, and nothing to do with the wireless.
Just do it, it works.

If a given computer connects to the router by ethernet cable and by
wireless, I'm not sure which takes priority, or whether anything will get
confused. By far the simplest option is therefore to disable the wireless
functionality on the computer while it is connecting by ethernet cable.

That's certainly true. But for completeness sake:

If there are two alternate network interfaces that'll get to the
destination, it comes down to the computer to pick the one to send
packets out.

On an OSX box, you set the preference order in the Networks prefs
panel. Go to Show: Network Port Configuration, and them drag Ethernet
to be higher than Airport. Highest gets preferred status.
