Well, either that or the monitor isn't seeing the computer - I just get

Am I barking up the wrong tree with this? Are the connectors wired
differently on the Apple adaptors? And if so, can anyone tell me where
I can buy the right adaptor (or cable)?

Everything sounds normal (except that it isn't working). Apple doesn't
use nonstandard pinouts on standard connectors. They use standard DVD-I,
which supports both analog and digital video. Some cards support dual
link DVI, for higher resolution displays.
Some G5s came with a video card that used the Apple Display Connector,
which is similar to DVI but has rounded ends, and it includes power, USB
and Firewire over the same cable. You need a different adapter to go
from ADC to DVI or ADC to VGA.
What model is the video card in the G5 (if you can tell), and what are
the specifications of the monitor you are trying to connect to it?
Does the video card have two connectors, if so what types?
The card is an ATI Radeon 9600XT - and yes, there are two connectors:
the DVI one I've described and a slightly larger version of the same
thing but with a 'clip' locking system instead of screws.
That's the ADC connector.
The only difference I've noticed with the Belkin lead and a borrowed
lead (using the Apple adaptor) that does work, is that on the latter,
one of the pins on the VGA plug is missing (the second one in on the
centre row), effectively making it a 14-pin connector, rather than 15.
Could this have any relevance?
Your computer may be outputting a resolution@refresh rate
that the display can't handle.
You can try a safe boot (shift held down)
This will force it into something safe usu 800x600
that any display should handle,
