Am I barking up the wrong tree with this? Are the connectors wired
differently on the Apple adaptors? And if so, can anyone tell me where
I can buy the right adaptor (or cable)?

Everything sounds normal (except that it isn't working). Apple doesn't
use nonstandard pinouts on standard connectors. They use standard DVD-I,
which supports both analog and digital video. Some cards support dual
link DVI, for higher resolution displays.
Some G5s came with a video card that used the Apple Display Connector,
which is similar to DVI but has rounded ends, and it includes power, USB
and Firewire over the same cable. You need a different adapter to go
from ADC to DVI or ADC to VGA.
What model is the video card in the G5 (if you can tell), and what are
the specifications of the monitor you are trying to connect to it?
Does the video card have two connectors, if so what types?
