Leopard Erase and Install help wanted

I have backed up my HD and going for Erase & Install. I would like to know
if I have got it right where the settings etc for these apps are stored.

Safari: User/library/cache/safari User/library/cache/com.apple.safari
User/library/cache/metadata/safari

Office 2004: User/documents/ Microsoft User Data

iTunes: User/music/iTunes

iPhoto: User/pictures/iPhoto Library

I can't find anything for Mail and Unison. Are the settings for them in the
apps package contents and do I just restore them from the backup.

Jay
