If I get a (new Apple) wireless keyboard with my new iMac, can I use it on
an
old Mac if I get a Bluetooth dongle?

Probably. You'll need to keep a wired keyboard around for doing
press-key-on-startup tricks, though, as the USB drivers won't load until the
OS loads.
You mean the Bluetooth drivers won't load until the OS loads... USB drivers
must be loaded before the OS to do press-key-on-startup tricks?
IIRC the USB keyboard and mouse drivers are special-cased, but the system
knows about them. If you have a Mac with built-in Bluetooth, again Bluetooth
keyboard and mouse drivers are special-cased. However, I'm pretty sure that
the drivers for Bluetooth USB dongles do _not_ get loaded early. Certainly
<http://docs.info.apple.com/article.html?artnum=86651> suggests that there
will be a problem unless you have a specific Bluetooth dongle, the D-Link
DBT-120 (Rev B2 or later).
