I use Apple Mail on this 'ere MBP as I do not have Mailsmith
installed. I have it set up to compose in plain text. Fire it up,
select its preferences and then the 'composing' 'tab'. There is a drop
down there that will allow you to choose between, plain text, rich
text and HTML.
Oh yes, but you can't stop it rendering HTML emails when you receive
them. Or at least you couldn't in the version I looked at whenever that
was.
No, you can't, but if you don't want html email (or rich text) you can
set a rule to delete them (or put them somewhere else) if you want.
