ABBYY Finreader Pro 5 for Mac. It only works on OS9 though and I notice
that they don't seem to sell it any more, so presumably they don't
intend to make an OSX version. That's a great pity because it's the best
I've used. I have a second computer which I keep in OS9 for this sort of
thing.

I had a registered version of Omnipage Pro (v.7) before I got this but
this was a lot better. I don't know how Omnipage has fared since.
