Identical.
If you record to tape first, you will have a backup, and your movies
will have timecode. If you ever upgrade to Final Cut Pro, or use an
asset manager like CatDV, then you won't have to start from scratch on
a second project that uses the same video assets.
With batch capture in FCP or grabbing hte timecoded assets out of
CatDV, re-creating all the input clips to your movie can be done
unattended. The alternative, if you don't want to re-log everything, is
to dedicate 13Gbytes/hour of video on your disks.

Whatever method you use for DV capture, the captured material will be
an identical - bit for bit - copy of what the camera produced in its
hardware DV coder. If you see something different, it will be happening
at playback time.
