Oh right. Entourage can do that - there's a "Send" button, which sends
immediately, and a "Send timed" button which just puts it in the Outbox and
waits for the next "Send" schedule to send it.

The S/MIME features in Mail.app and Entourage are both very nice. The PGP
support in Mail.app is pretty nifty too, if you have PGP 9.
