What matters is to be consistent. I use maildir, and recommend it.
I think the main options are Thunderbird, Sylpheed, Claws and
Evolution, but other suggestions are welcome as I'm pretty ignorant of
the issues. Is Zimbra an option?
There are many options. But no need to decide that up front:
try one, and if you don't like it, try another.
The key thing to consider is to split the function of managing
the mailbox from the client. That way, you'll never be tied to
a particular client, and you can do things like access your mailbox
from your laptop. Install an imap server (I use dovecot), and
configure [your choice of client] to use that.
