Eventually tried some different RAM, and it all started to work...
The new RAM supplied with the bundle seemed to pass the POST, but
wasn't up to installing / running XP.

Seconded. Usually those types of faults are down to bad/incompatible
RAM.

When you construct a system a) attach a floppy disk and b) run MEMTEST86 for several hours before you even waste your time trying to install something flaky like an MS OS. ... The errors from MEMTEST86 are much clearer and easier to debug than the random errors at random stages you will get from an XP install. ...
