Dual graphics and sound cards under 2000, or only XP?

I have all the spare parts to construct a computer for use as a dual
tuner PVR, based around the following hardware:
All in Wonder Radeon (AGP 2x)
All in Wonder Radeon (PCI)
Athlon XP 3000+ CPU
Asus K7V333 motherboard
(one of the few compatible with all of the above)
2x SB Audigy2 OEM
Either 160GB or 300GB hard disk (possibly two of them)
16x DVD writer
I suspect that 0.5GB of DDRAM will do, although I could put in 1GB if
I'm wrong.
Will it be possible to set up dual graphics cards, dual TV tuners and
dual sound cards in Windows 2000, or do I need Windows XP to make this
work?
If I need Windows XP, which version should I opt for? Home, Pro or MCE?
How much could I sell this little lot for?
